Lemon Tarragon Potato Salad

Tarragon Potato SaladPotato salad is a summer classic! This one has the bright flavor of lemon, along with savory tarragon. The Greek yogurt instead of mayonnaise adds a light creaminess. Serves 4-6 as a side dish.




  • 2 lbs. red potatoes
  • 1/4 cup red onion, diced
  • 1/2 cup celery, diced
  • 1 Tbs. minced garlic
  • 1 cup plain Greek yogurt
  • 1/4 cup lemon juice
  • zest from 1 lemon
  • 2 Tbs. dried tarragon
  • 1 tsp. salt
  • 1 tsp. black pepper

Leaving the skin on, cut the potatoes into bite sized pieces. Boil 12-20 minutes. Potatoes are done when they are easily pierced with a fork, still slightly firm. Drain, allow to cool thoroughly. Mix yogurt, lemon juce, zest, taragon, salt and pepper. When the potatoes are cool, toss all of the ingredients together and refrigerate at least 30 minutes.
