Baked Zucchini Fries
Baked Zucchini Fries
Ingredients:
Fries
- 1 lb zucchini, halved and sliced into ½ inch thick sticks
- ¼ cup all purpose flour
- 2 eggs, beaten
- 1 cup panko bread crumbs
- ¼ cup parmesan cheese, grated
- 2 Tbsp fresh parsley, minced
- 1 tsp italian seasoning
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt & pepper, to taste
Ranch Dip
- 1/2 cup plain yogurt
- 1 Tbsp fresh parsley, minced
- 1 Tbsp red onion, minced
- 1 clove garlic, grated
- 1 tsp lemon juice
- ½ tsp dry dill
- ¼ tsp smoked paprika
- Sea salt and black pepper, to taste
Instructions:
- Preheat the oven to 425°F. Line a baking sheet with parchment or a silicone mat. In a medium bowl, mix together panko, parmesan, 2 Tbsp parsley, Italian seasoning, garlic powder, onion powder, and salt and pepper to taste. Set aside.
- Pat zucchini sticks dry with a clean kitchen towel. Dredge in flour. In small batches, dip in egg, and then thoroughly coat in panko mixture. Place on the prepared baking sheet.
- Bake for 25 minutes, or until golden and crisp, flipping halfway through.
- Stir together all dip ingredients until well mixed. Serve with zucchini fries.
