Instructions:

  1. Preheat the oven to 425°F. Line a baking sheet with parchment or a silicone mat. In a medium bowl, mix together panko, parmesan, 2 Tbsp parsley, Italian seasoning, garlic powder, onion powder, and salt and pepper to taste. Set aside.
  2. Pat zucchini sticks dry with a clean kitchen towel. Dredge in flour. In small batches, dip in egg, and then thoroughly coat in panko mixture. Place on the prepared baking sheet.
  3. Bake for 25 minutes, or until golden and crisp, flipping halfway through.
  4. Stir together all dip ingredients until well mixed. Serve with zucchini fries.
