Apple Pudding Cake
Makes 6 Servings
Preheat oven to 350°F. Grease a glass pie dish or 8×4-inch loaf pan and set aside.
In a large bowl, cream together shortening, sugar, egg, and vanilla extract.
In a second bowl, stir together nutmeg, cinnamon, salt, baking soda, and flour. Add to shortening mix and stir to combine. Stir in pecans, apples, and hot water.
Pour batter into the prepared pan. Bake 45-55 minutes, or until an inserted toothpick comes out clean. Cake will be a little gooey.
To serve, scoop warm from pan into a bowl. Delicious with vanilla ice cream or whipped cream.
