													Ingredients
- 1 Tbsp olive oil
- 3 garlic cloves, peeled and chopped
- 1 thumb size knob of fresh ginger, peeled and minced
- 1 lb boneless skinless chicken, cubed
- 3 cups broccoli, chopped into florets
- ½ cup coconut aminos
- 10 carrots, shaved into very thin pieces
- 3 green onions, sliced
- 2 eggs, beaten
- Sea salt and pepper, to taste
Instructions
- Heat olive oil on medium-high heat
- Add the garlic and ginger to the skillet and saute for 2 minutes
- Add the chicken and saute for another 5 minutes
- Add the broccoli and coconut aminos. Cook another 5 minutes
- Add the carrot noodles and green onions. Cook another 5 minutes.
- Push the vegetables to the sides of the pan and pour the beaten eggs in the middle. Let the eggs cook for roughly 2-3 minutes or until thickened and no visible liquid egg remains
