  1. Heat olive oil on medium-high heat
  2. Add the garlic and ginger to the skillet and saute for 2 minutes
  3. Add the chicken and saute for another 5 minutes
  4. Add the broccoli and coconut aminos. Cook another 5 minutes
  5. Add the carrot noodles and green onions. Cook another 5 minutes.
  6. Push the vegetables to the sides of the pan and pour the beaten eggs in the middle. Let the eggs cook for roughly 2-3 minutes or until thickened and no visible liquid egg remains
  7. Mix everything together and serve.
