Garlicky Brussels Sprouts with Bacon

Ingredients:

  • 1 lb organic Brussels sprouts, washed and trimmed
  • 4 oz uncured bacon, chopped
  • 1 Tbsp unsalted butter
  • 1 Tbsp extra virgin olive oil
  • 5 cloves fresh garlic, minced
  • Salt and pepper, to taste

Instructions:

  1. Heat oil in a large cast iron skillet over medium heat.
  2. Add bacon and cook, stirring often, until crispy. Remove bacon and set aside.
  3. Add butter and garlic to skillet and sauté for about 2-3 minutes.
  4. Add Brussels sprouts and sauté until they soften and begin to brown, about 10-12 minutes.
  5. Season with salt and pepper to taste. Stir in bacon, serve immediately.
