Combine shredded coconut, honey, coconut oil, agar, and coconut cream in a large bowl. Mix with your hands until it holds its shape. If needed, add a little extra coconut or coconut oil to adjust consistency.
Form into preferred shape- balls, squares, or bars.
Freeze until hard, about 15 minutes.
While bars are freezing, melt carob in a small saucepan over medium heat, stirring constantly.
Remove bars from the freezer. Gently poke a toothpick into one side and dip into melted carob. Place on a piece of parchment paper, and immediately top with desired toppings.
