Ingredients:

  • 1 1/3 cups unsweetened shredded coconut
  • 3 Tbsp honey
  • 1/3 cup coconut oil
  • 1 1/2 Tbsp agar
  • 1/3 cup plus 1Tbsp coconut cream
  • 1 cup carob chips
  • Goji berries, pumpkin seeds, and toasted maple coconut for toppings.

Instructions:

  1. Combine shredded coconut, honey, coconut oil, agar, and coconut cream in a large bowl. Mix with your hands until it holds its shape. If needed, add a little extra coconut or coconut oil to adjust consistency.
  2. Form into preferred shape- balls, squares, or bars.
  3. Freeze until hard, about 15 minutes.
  4. While bars are freezing, melt carob in a small saucepan over medium heat, stirring constantly.
  5. Remove bars from the freezer. Gently poke a toothpick into one side and dip into melted carob. Place on a piece of parchment paper, and immediately top with desired toppings.
  6. Allow to sit until carob sets. Enjoy!
