Mandarin Mimosas



  1. Combine 1/2 cup sugar and mandarin juice in a small saucepan. Bring to a low boil over medium-high heat.
  2. Reduce heat to medium and simmer until syrup has thickened slightly, about 10 to12 minutes.Remove from heat.
  3. Stir in mandarin zest, allow to steep for about 20 minutes. Remove or strain zest from syrup and chill.
  4. Rub the rim of each glass with a slice of orange or mandarin, dip in remaining 1 Tbsp sugar.
  5. Add a tablespoon of chilled syrup to each glass, fill with champagne, stir, garnish with slice of orange or mandarin and enjoy!

Makes 4-6 servings
