Nine Grain Cookies
Enjoy these great tasting cookies, and feel the energy from nine different grains.
Nine Grain Cookies
Ingredients:
- ½ cup butter, at room temperature
- ¾ cup unrefined cane sugar
- ¾ cup brown sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 ½ cup unbleached wheat flour
- ½ tsp baking soda
- ½ tsp baking powder
- ½ tsp kosher salt
- ¾ tsp cinnamon
- ¼ tsp cardamom
- ¼ tsp nutmeg
- ⅛ tsp cloves
- 1 ½ cups rolled nine grain flakes (found in the bulk department)
- 1 ½ cups rolled oats
- 1 cup flame raisins
- 1 cup slivered almonds
Instructions:
- In a large mixing bowl, cream together butter and sugar.
- Mix in egg and vanilla until combined.
- In a small bowl, whisk together flour, baking soda,baking powder, salt, cinnamon, cardamom, nutmeg, and cloves. Mix into the butter and sugar mixture with a wooden spoon.
- Fold in oats, raisins, and walnuts until thoroughly mixed.
- Let dough sit for 30 minutes, to allow the flour and oats to hydrate.
- Preheat the oven to 350°F. Line a rimmed baking sheet with baking parchment or a silicone baking mat.
- Scoop dough by tablespoonfuls onto the prepared baking sheet.
- Bake for about 12-15 minutes, or until cookies are set and edges are golden and crispy. Allow to cool for 5 minutes on the baking sheet before moving to a rack.
