Peanut Butter Cookies
Peanut Butter Cookies
Ingredients:
- ¾ cup creamy peanut butter
- ½ cup unsalted butter, softened
- ½ cup granulated cane sugar
- ½ cup brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1 cup unbleached wheat flour, spooned and leveled
- ¾ tsp baking soda
- ½ tsp baking powder
- ¼ tsp salt
- 1 cup mini peanut butter cups, rough chop ½ cup
- ½ cup chocolate chips
Instructions:
- In a large mixing bowl, beat peanut butter, butter, cane sugar, brown sugar, egg, and vanilla extract on medium speed until smooth, about 3 minutes.
- With a wooden spoon, mix in flour, baking soda, baking powder, and salt until combined. Gently fold in peanut butter cups and chocolate chips.
- Preheat the oven to 350°F. Line a baking sheet with parchment paper or a silicone mat. Scoop out about 2 Tbsp dough. Roll into a ball and place on the prepared baking sheet. Flatten with the back of a spoon to ½ inch thick. Bake for 9-11 minutes or until cookies are set and browned around the edges. Allow to cool on the baking sheet 5 minutes before removing to a rack.
Makes about 2 dozen cookies
