Peanut Butter Cookies

Ingredients:

  • ¾ cup creamy peanut butter
  • ½ cup unsalted butter, softened
  • ½ cup granulated cane sugar
  • ½ cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup unbleached wheat flour, spooned and leveled
  • ¾ tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 cup mini peanut butter cups, rough chop ½ cup
  • ½ cup chocolate chips

 

Instructions:

  1. In a large mixing bowl, beat peanut butter, butter, cane sugar, brown sugar, egg, and vanilla extract on medium speed until smooth, about 3 minutes.
  2. With a wooden spoon, mix in flour, baking soda, baking powder, and salt until combined. Gently fold in peanut butter cups and chocolate chips.
  3. Preheat the oven to 350°F. Line a baking sheet with parchment paper or a silicone mat. Scoop out about 2 Tbsp dough. Roll into a ball and place on the prepared baking sheet. Flatten with the back of a spoon to ½ inch thick. Bake for 9-11 minutes or until cookies are set and browned around the edges. Allow to cool on the baking sheet 5 minutes before removing to a rack. 

Makes about 2 dozen cookies
