Ingredients:
- 2 Tbsp olive oil
- 1 lb chicken breast tenders
- Black pepper, to taste
- ½ cup mirin
- ½ cup orange juice, fresh squeezed
- ¼ cup soy sauce
- 3 Tbsp honey
- 1 Tbsp rice vinegar
- ½ tsp ground ginger
- 1 tsp red pepper flakes, or to taste
- 1 tsp cornstarch
- 1 Tbsp water
Instructions:
Chicken
- Heat olive oil in a large skillet over medium heat.
- Pat chicken dry. Sprinkle with pepper.
- Sauté chicken until browned and cooked through, about 4 minutes each side.
Teriyaki Sauce
4. In a small saucepan, whisk together mirin, orange juice, soy sauce, honey, rice vinegar, ginger, and red pepper flakes. Bring to a low boil and reduce heat to medium. Simmer for about 10 minutes, or until slightly reduced.
5. In a small bowl, whisk together cornstarch and water. Whisk into the teriyaki sauce. Cook and stir until thickened and bubbly.
6. Just before serving, brush teriyaki onto cooked chicken. Enjoy!
