Ingredients:

  • 1 bunch asparagus
  • 3 Tbsp vinaigrette (we used Annie’s Naturals Organic Roasted Garlic Vinaigrette), or use organic olive oil for a simple side that is excellent with fish.
  • 1 1/2 Tbsp grated Parmesan cheese
  • Sea salt and pepper to taste

Instructions:

  1. Preheat oven to 425ºF
  2. Wash asparagus and snap off ends
  3. Toss with vinaigrette, sea salt and pepper, sprinkle with Parmesan, and place in a baking dish
  4. Roast for 10 to 15 minutes, or until just tender. Cooking times will vary depending on size of spears and personal preference.

Serves: 2
