Ingredients:

  • 1 head cauliflower, chopped into florets
  • 4 cloves garlic, minced
  • 1 Tbsp fresh lemon juice
  • 1/4 cup olive oil
  • 1/2 cup Parmesan, grated
  • 1/2 tsp pepper
  • 1/4 tsp salt

Instructions:

  1. Preheat oven to 400°F. Line a rimmed baking sheet with parchment paper.
  2. In a bowl, toss together all ingredients until evenly coated.
  3. Spread in a single layer on baking sheet.
  4. Roast about 25 minutes, or until florets can be pierced with a fork and are golden brown. Flip halfway through.
