Rosemary-Garlic Delicata Squash

  • 1 delicata squash, cut lengthwise with seeds removed
  • 2 cloves fresh garlic, minced
  • 1 Tbsp olive oil
  • 1 sprig fresh rosemary, minced
  • Salt and pepper, to taste
  • Parmesan cheese, shredded


  1. Slice squash into half inch pieces.
  2. Heat oil in a skillet on medium heat. Add garlic and rosemary, cook until just fragrant.
  3. Cook squash until tender, about 5-7 minutes, flipping halfway so each side browns evenly.
  4. Sprinkle with salt, pepper and cheese. Serve warm.
