Ingredients
:
2 1/2 lbs
organic sweet potatoes
, peeled and cut into 1-inch cubes
3/4 cup organic
red onion
, diced
1/2 bunch
organic green onions
, sliced
1/4 cup red wine vinegar
1/4 cup organic
sunflower oil
2 rounded teaspoons
Dijon mustard
1/8 teaspoon
sea salt
1/2 teaspoon
black pepper
3 teaspoon
dried marjoram
Instructions
:
Boil sweet potatoes until just soft, cool.
Place red and green onion into a large bowl.
Whisk together oil, mustard, vinegar, salt and pepper. Add to chopped onions.
Add cooled sweet potatoes and mix gently so they don’t break up.
Chill before serving.
