Ingredients:

  • 1/2 cup butter
  • 1/2 cup organic cane sugar
  • 2 eggs, beaten
  • 3 ripe bananas, finely mashed
  • 1/2 tsp vanilla extract
  • 1/2 tsp salt
  • 1 1/2 cup all purpose flour
  • ¼ cup unsweetened cocoa powder
  • 2 tsp baking powder

 

Instructions:

  1. Preheat the oven to 350°F. Grease an 8×4 inch loaf pan with cooking spray or butter.
  2. Cream together butter and sugar. Mix in eggs, bananas, and vanilla.
  3. In a large bowl, mix together salt, flour, and baking powder.
  4. Add flour mixture to butter mixture, stir until just combined.
  5. Divide batter into 2 bowls. Mix cocoa powder into one, stirring until combined.
  6. Spoon alternating spoonfuls of chocolate and plain batter into the prepared loaf pan until all is added. Drag a butter knife through the batter, swirling everything together.
  7. Bake for 50-60 minutes, or until a wooden pick inserted into the center comes out clean.
  8. Cool for 5-10 minutes, remove from the pan. Cool another 10 minutes before slicing, and cool completely before wrapping and storing.
