Ingredients:

  • 1 lb red, yellow or purple potatoes,
  • quartered
  • 2 Tbsp olive oil
  • 3 cloves garlic, chopped
  • 2 sprigs fresh rosemary, chopped
  • 1/2 tsp sea salt
  • 1/2 tsp pepper

Instructions:

  1. Preheat oven to 375°F. Line a rimmed baking sheet with foil or parchment.
  2. Toss all ingredients in a small bowl.
  3. Spread out in a single layer on baking sheet.
  4. Bake until potatoes can be easily pierced with a fork, about 30 minutes.
