Texas Caviar:

  • One 14 oz can black beans
  • 1 cup fresh corn
  • 1 red bell pepper, chopped
  • 1 Ataulfo mango, pitted, peeled and chopped
  • 1 small red onion, chopped
  • 2 or 3 Persian cucumbers, chopped

Creamy Avocado Dressing

  • Small handful cilantro leaves
  • 2 limes, juiced
  • 1/4 cup coconut milk
  • 1 avocado, peeled, pitted and chopped
  • Salt and pepper
  1. Add all caviar ingredients to a bowl.
  2. Add all dressing ingredients to a blender, blend until smooth and creamy. Season with salt and pepper, to taste.
  3. Toss veggies with dressing.
