Salmon with Strawberry Salsa



  • 2 cups strawberries, chopped
  • 1/2 cup white onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 jalapeño, finely chopped
  • 1 lime, juiced
  • Salt and pepper, to taste
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp olive oil
  • 1 lb salmon, cut into 4 fillets


  1. In a bowl, gently toss together strawberries, onion, cilantro, jalapeño, and lime juice. Season to taste with salt and pepper.
  2. Preheat oven to 450°F. Line a baking sheet with parchment paper.
  3. In a small bowl, mix together olive oil and balsamic vinegar. Brush salmon with mixture.
  4. Place salmon on baking sheet skin side down. Bake about 8 minutes, or until cooked through, and flakes easily with a fork.
  5. Top salmon with strawberry salsa.
