Strawberry Vanilla Bean Bellini
Sweet Oregon strawberries and fragrant Singing Dog vanilla beans come together in this fresh, sparkling twist on a classic bellini. Light, fruity, and just a little floral, this cocktail feels like the perfect way to celebrate the start of strawberry season. Ingredients
- 1 pint chilled strawberries, washed
- 1 cup organic cane sugar
- 1 cup filtered water
- 1 vanilla bean
- 750 ml chilled prosecco or N/A sparkling wine for a mocktail
- 2 oz Grand Marnier (optional)
- Squeeze of lemon
- Fresh mint for garnish, optional
Vanilla Simple Syrup
- In a small saucepan, stir together sugar and water over medium high heat.
- Bring to a low boil, reduce heat to medium low. Add vanilla bean.
- Simmer for 12 minutes, or until the syrup is slightly thickened.
- Allow to cool, store in a sealed container in the fridge until ready to use.
Cocktail
Slice a few strawberries for a garnish if desired, set aside.
Add remaining strawberries to the blender. Blend to a puree. Add vanilla syrup to taste–about ¼ cup to ½ cup, a squeeze of lemon, and Grand Marnier, if using.
Pour ½ cup (4 oz) sparkling wine or water into a glass. Top with strawberry puree. Stir and serve immediately.
