Sweet and Tangy Drumsticks are marinated chicken legs, oven baked, with a sweet, tangy glaze.
Sweet and Tangy Drumsticks
Ingredients:
- 2 lbs chicken drumsticks (skinned, if desired)
- 2 Tbsp tamari
- 2 Tbsp olive oil
- 2 cloves garlic, minced
- 1 lemon, juiced
- ¼ tsp black pepper
- 2 Tbsp rice vinegar
- 1 Tbsp tamari
- 1 Tbsp mirin
- 2 tsp cane sugar
- Pinch of red chili flakes
Instructions:
- In a bowl or plastic bag, place chicken, 2 Tbsp tamari, olive oil, garlic, lemon juice, and black pepper. Toss to coat, and marinate in the fridge for at least 30 minutes, up to overnight.
- In a small saucepan, bring rice vinegar, 1 Tbsp tamari, mirin, and sugar to a simmer over medium high heat. Cook, whisking constantly until the glaze thickens slightly, about 5 minutes.
- Preheat the oven to 450°F. Line a rimmed baking sheet with aluminum foil and spray with cooking spray. Roast chicken for 10 minutes on the prepared baking sheet. Brush with glaze, and broil 8 inches from the heat source for 10-15 minutes, (or until internal temperature reaches 165°F) turning and brushing with glaze every 5 minutes. Remove from the oven and allow to rest at least 5 minutes before enjoying.
