Papaya Chicken
Papaya Chicken features a functional marinade, and a tangy salsa topping over lean, economical barbecue chicken thighs. Yum!
Papaya Chicken
Ingredients:
- 1 lb boneless skinless chicken thighs
- Neutral oil for cooking
Marinade
- 1 cup ripe papaya chunks
- 1 lime, zest and juice
- ¼ cup plain yogurt
- 1 Tbsp olive oil
- 1 tsp chili powder
- ½ tsp kosher salt
- ¼ tsp cayenne (optional)
Salsa
- 1 cup papaya, diced
- 1 cup tomato, diced
- ½ cup red onion, diced
- 1 lime, juiced
- ¼ cup cilantro, finely chopped
- ¼ tsp chili powder
- Salt and pepper, to taste
Instructions:
- Add marinade ingredients to a blender and blend until smooth, splashing with a little water to get it going if needed. Add to a bowl with the chicken and allow to marinate for at least 1 hour.
- In a medium bowl mix together salsa ingredients. Cover and refrigerate until ready to serve.
- Heat a drizzle of oil over medium high heat. Scrape marinade off the chicken and cook for 4-5 minutes each side, or until done. Allow to rest 5 minutes until serving with papaya salsa.
