This Meyer Lemon Mimosas recipe features the subtle flavors of the Meyer Lemon which is a cross between a citron and a mandarin/pomelo hybrid.
Ingredients:
- 1/2 cup organic Meyer lemon juice (about 2-4 lemons)
- 1 slice lemon per serving, for garnish
- Zest of one lemon
- 1/2 cup organic cane sugar, plus 1 Tbsp for garnish
- 1 750ml bottle champagne, sparkling water, or ginger ale
Instructions:
- Combine 1/2 cup sugar and lemon juice in a small saucepan. Bring to a low boil over medium-high heat.
- Reduce heat to medium and simmer until syrup has thickened slightly, about 10 to12 minutes.Remove from heat.
- Stir in lemon zest, allow to steep for about 20 minutes. Remove or strain zest from syrup and chill.
- Rub the rim of each glass with a slice of lemon, dip in remaining 1 Tbsp sugar.
- Add a tablespoon of chilled syrup to each glass, fill with champagne, stir, garnish with slice of lemon and enjoy!
