Pasta with Chard and Bacon
With the addition of bacon and fresh chard, this linguine-based pasta recipe can be easily cooked in a dutch oven. It’s perfect for camping trips, or enjoyed right at home.
Ingredients:
- ½ lb linguine
- 6 slices bacon, cut into 1-inch pieces
- 1 red onion, sliced
- 1 bunch chard, chop stems and greens separately
- 3 cloves garlic, minced
- ½ cup dry white wine
- Pinch red pepper flakes
- Salt and pepper, to taste
- 2 Tbsp olive oil
- ½ cup grated parmesan cheese
Instructions:
- Cook linguine to al dente, following package instructions. Drain, reserve 1/2 cup pasta water.
- Cook bacon in a Dutch oven over medium heat until it begins to crisp. Set aside to drain on paper towels. Drain off bacon fat from the skillet, reserving a tablespoon to cook vegetables.
- Add onion and chard stems, cook until just soft, about 5 minutes. Add garlic, cook until fragrant, about a minute.
- Deglaze pan with white wine, cook and stir until reduced by half.
- Add chard greens, pasta water, salt, pepper, and red pepper flakes. Toss until the chard is wilted, about 4 minutes.
- Add linguine, bacon, and olive oil to the pot, toss to coat. Sprinkle with Parmesan cheese.
