Chili Lime Quinoa Salad

This recipe is for a vibrant Quinoa Black Bean Salad featuring a zesty, smoky dressing. The salad combines the earthy goodness of quinoa and black beans with the sweetness of grilled corn and cherry tomatoes. Crunchy cucumber, red onion, and optional jalapeño add a fresh bite, while cilantro infuses the mix with a herbal note.

The dressing is a delectable blend of olive oil, lime juice and zest, white balsamic vinegar, and honey, spiced up with garlic, chili powder, smoked paprika, and a touch of chili flakes. Smoked sea salt and black pepper provide the perfect seasoning balance.

The salad is hearty enough to stand alone as a meal or can be served as a side dish. After preparing the dressing and cooking the quinoa, simply toss everything together and let the flavors meld in the refrigerator until you’re ready to enjoy this refreshing and nutritious dish.
