Lamb Stuffed Bell Peppers

Ingredients:
- 1 Tbsp avocado oil
- 1 yellow onion, chopped
- 4 cloves garlic, minced
- 1 tsp fresh ginger, minced
- 1 lb ground lamb
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp cayenne
- 1/2 tsp chili flakes
- 1/2 tsp cinnamon
- 1/2 tsp turmeric
- 1/2 tsp chili powder
- 1/2 tsp smoked paprika
- 1/2 tsp sea salt
- 2 cups fresh or frozen peas
- 2 large bell peppers, cut lengthwise, seeds removed
- 1/2 cup water
Instructions:
- Preheat oven to 350°F
- Heat oil in a large skillet over medium heat. Saute onion until translucent and beginning to soften. Add garlic and ginger, cook and stir until fragrant.
- Add ground lamb and all spices to the onion mixture. Cook until the lamb is browned and crumbly. Once the mixture is fully cooked, taste some and adjust seasoning if desired.
- Drain fat if necessary, stir green peas into the meat mixture.
- Stuff peppers with lamb, place in a dutch oven or baking dish. Add water, cover and bake about 35 minutes, or until peppers are tender.
