Maple Thyme Chicken Thighs

 

Ingredients:

  • 1 lb boneless skinless chicken thighs
  • Neutral oil for cooking
  • Salt and pepper, to taste
  • 1 tbsp butter
  • ½ cup maple syrup
  • Splash white wine or broth
  • 8 sprigs fresh thyme, picked and chopped
  • ¼ tsp cayenne pepper, optional

 

Instructions:

  1. Season chicken thighs all over with salt and pepper.
  2. Heat oil in a medium skillet over medium high heat. Cook chicken for 5 minutes per side, or until done. Remove from the skillet and set aside.
  3. Keeping heat at medium high, add a splash of white wine or broth and deglaze the pan, scraping up any browned bits. Add butter to the pan and melt. Reduce heat to medium. Stir in the maple syrup, thyme leaves, and cayenne pepper. Bring to a simmer and cook until slightly thickened, about 1-2 minutes. Add chicken back to the pan, turning to coat. Serve hot, drizzled with remaining glaze.
