Meyer Lemon Mimosas

  • 1/2 cup organic Meyer lemon juice (about 2-4 lemons)
  • 1 slice lemon per serving, for garnish
  • Zest of one lemon
  • 1/2 cup organic cane sugar, plus 1 Tbsp for garnish
  • 1 750ml bottle champagne, sparkling water, or ginger ale


  1. Combine 1/2 cup sugar and lemon juice in a small saucepan. Bring to a low boil over medium-high heat.
  2. Reduce heat to medium and simmer until syrup has thickened slightly, about 10 to12 minutes.Remove from heat.
  3. Stir in lemon zest, allow to steep for about 20 minutes. Remove or strain zest from syrup and chill.
  4. Rub the rim of each glass with a slice of lemon, dip in remaining 1 Tbsp sugar.
  5. Add a tablespoon of chilled syrup to each glass, fill with champagne, stir, garnish with slice of lemon and enjoy!
