Oatmeal Applesauce Cookies

Ingredients:

Instructions:

  1. Preheat oven to 350°F. Line a rimmed baking sheet with baking parchment or a silicone baking mat.
  2. In a large mixing bowl, cream together butter and sugars.
  3. Mix in egg, applesauce, and vanilla until combined.
  4. In a small bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  5. Stir in to the butter and sugar mixture.
  6. Mix in oats, raisins, and walnuts until combined.
  7. Refrigerate dough for about 15 minutes to allow to firm up.
  8. Scoop dough by the tablespoonful onto prepared baking sheet.
  9. Bake about 15 minutes, or until cookies were set and edges are crispy.
  10. Allow to cool 5 minutes on baking sheet before cooling on a rack.
 

Homemade Applesauce:

  1. Peel, core, and chop five apples.
  2. Place in a medium saucepan with 1⁄2 cup water and 1 teaspoon cinnamon.
  3. Bring to a low boil. Reduce heat to medium and cook for about 20 minutes, or until tender.
  4. Mash.
