There is a bit of hope in the flavor department, however, and satisfying sides are closer than imagined. The joys of the brassica vegetables shine through in this recipe as cauliflower emerges a hero.  Teamed with the fragrant power of  garlic, this mash becomes a monster of flavor!

Brave cooks will take this to the extreme by roasting the garlic in a pat of vegan butter before performing the mashing part. Immerse that blender, and immerse your taste buds in flavor!

Lower carbs than mashed potatoes, this vegan recipe results in a full-flavored, Garlicky Cauliflower Mash, that is perfect as a side for your meal.

Garlicky Cauliflower Mash

2 heads of cauliflower, cut into florets

4 cloves garlic, peeled and smashed

1⁄4 cup macadamia milk

2 tsp pepper

1⁄2 tsp salt

1⁄2 stick vegan butter

1⁄2 tsp garlic powder

1 tsp onion powder


Place cauliflower and garlic cloves in a large pot and cover with water.

Bring to a boil, reduce heat and simmer 20 minutes or until soft.

Drain water.

Add milk, butter, and spices.

Use an immersion blender and blend until smooth and fluffy.

Makes 8 servings
