Spiced Cranberry Sauce

Instructions:
- Discard any bruised cranberries. Bring cranberries, honey, sugar, cinnamon sticks, cardamom pods, nutmeg, cloves, and ¾ cups water to a simmer.
- Cover and simmer over medium low heat for 7-10 minutes, until the cranberries are just beginning to burst, and the mixture starts thickening.
- Add the orange zest and candied ginger and stir to combine.
- Simmer, uncovered, for 2 minutes.
- Scoop out cardamom pods and cinnamon sticks. Let cool.
