Tangy Lime Grilled Chicken
Seasoned with a zestful blend of lime, chili powder, smoked paprika, and other spices, the chicken marinates for at few hours in a tangy and smoky mixture that includes olive oil, lime juice and zest, chili powder, smoked paprika, garlic and onion powder, and optional cayenne for an extra kick. Then it is grilled to perfection, achieving a juicy interior and a beautifully spiced exterior. Serve with grilled ears of corn or elotes as accompaniment. The dish provides a balanced combination of flavors, and it’s perfect for summer barbecues or a satisfying weeknight meal. Tangy Lime Grilled Chicken
Ingredients:
- 2 lbs boneless skinless chicken breast
- 2 Tbsp olive oil
- Juice and zest of 1 lime
- 1 ½ tsp chili powder
- ¾ tsp smoked paprika
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ½ tsp pepper
- ¼ tsp cayenne pepper (optional)
- 4 ears corn (or extras for leftovers)
Instructions:
- In a large bowl, whisk together all marinade ingredients. Add chicken, turning to coat. Cover and marinate for at least 2 hours to overnight.
- Grill corn over medium-high heat for 15-20 minutes, turning every 5 minutes. Remove from heat and cool for 5 minutes before serving.
- Grill chicken over medium-high heat for 5-6 minutes per side, or until cooked through to a temperature of 165°F. Allow to rest 5-10 minutes before serving.
