Ingredients:
1 ½ cups
unbleached wheat flour
½ tsp
salt
½ tsp
baking soda
½ tsp
baking powder
2 tsp
cinnamon
½ tsp
nutmeg
¼ tsp
black pepper
⅛ tsp
ground cloves
⅔ cup
turbinado sugar
2
eggs, beaten
½ cup
butter
, melted and cooled
2 tsp
vanilla
2 cups
grated zucchini
(about 1 or 2 whole zucchini)
¼ cup
chocolate chips
¼ cup
chocolate mini chips
Instructions:
Preheat oven to 350°F. Grease an 8-inch x 4-inch loaf pan with butter or cooking spray.
In a medium sized bowl, whisk together flour, salt, baking soda, baking powder, cinnamon, nutmeg, pepper, and cloves.
To the dry ingredients, add sugar, eggs, butter, vanilla, zucchini, and chocolate chips. Mix until well combined.
Pour into prepared loaf pan. Bake about 55 minutes, or until toothpick inserted into center comes out clean.
Allow to cool on a rack for about 15 minutes, then remove from the pan. Enjoy!
