Vegetable Fritters
Ingredients:
- 1 cup kohlrabi, shredded
- 1 cup carrot, shredded
- 1 cup zucchini, shredded
- 1 cup beets, shredded
- ¼ cup green onions, sliced
- 4 cloves garlic, minced
- 1 serrano pepper, minced
- ⅔ cup unbleached wheat flour
- 2 eggs
- 1 tsp kosher salt
- ½ tsp ground black pepper
- ½ tsp ground cumin
- ½ tsp ground cardamom
- ½ tsp ground coriander
Instructions:
- Using cheesecloth, squeeze out any excess water in the kohlrabi, carrot, zucchini, and beets.
- Add all ingredients except for the oil to a large bowl and mix well.
- Heat 2 Tbsp oil in a medium skillet over medium high heat. Scoop fritter batter into the hot oil with a ¼ cup measuring cup. Flatten slightly and cook until golden, about 2-3 minutes on each side. Drain on paper towels or clean kitchen towels and sprinkle with salt. Repeat, adding more oil as needed until all fritters are cooked. Serve with tzatziki.
To bake fritters, scoop ¼ cup portions of batter onto a well greased baking sheet and flatten slightly. Bake at 375°F for 25-30 minutes, flipping after 15 minutes.
