Apple Elderberry Shrub
Made with sweetened apple cider vinegar, elderberry syrup, ginger and lemon, this recipe ideal as a mocktail, or add a bit of wine and enjoy!
Apple Elderberry Shrub
Ingredients:
Shrub Syrup
- 1 large sweet apple, shredded
- 1 Tbsp lemon juice
- ½ Tbsp ginger, grated
- ½ cup raw honey or granulated sugar
- ½ cup raw apple cider vinegar
Cocktail
- 1.5 oz shrub syrup, or to taste
- 1 tsp (or serving) elderberry syrup
- Sparkling water (or sparkling wine)
Instructions:
- To make the syrup, add shredded apple, lemon juice, ginger, and honey to a small glass bowl. Mix well, cover, and refrigerate 24 hours. Stir every 8 hours or so.
- Strain syrup from fruit with cheesecloth or a fine mesh strainer into a clean glass jar. Squeeze out as much syrup from the shredded fruit as you can. Add apple cider vinegar to the jar with the syrup. Seal and shake well. Refrigerate at least 24 hours, or up to a week. The vinegar will mellow as it sits.
- To make the shrub, add vinegar mixture (shrub syrup), and elderberry syrup to a shaker with ice. Shake well. Strain into an 8 oz glass with ice. Top with sparkling water.
