Sparkling Grapefruit Sunrise
Sparkling Grapefruit Sunrise combines the citrus tartness of grapefruit, and the sweet-astringency of pomegranates into a delicious cocktail.
Ingredients:
Grenadine Syrup
- 2 pomegranates, seeded (1 cup juice)
- 1 lemon, zested and juiced
- ½ cup granulated cane sugar
Cocktail
- 2 grapefruits, juiced (~2 cups juice), chilled
- 4 oz grenadine syrup (see section above,) or to taste
- Sparkling water or sparkling wine, chilled
Instructions:
- Run pomegranate arils through a juicer. Alternatively, place in a blender and pulse to remove juice. Strain through cheesecloth or a mesh strainer.
- In a medium saucepan, stir together pomegranate juice, lemon juice, zest, and sugar. Bring to a boil. Reduce heat to low, and simmer gently for 30 minutes, or until syrup is reduced by about half. Allow to cool and strain through a mesh strainer. Store refrigerated in a jar with a tight fitting lid.
- Place 1 oz grenadine in each glass. Pour in grapefruit juice, and top with sparkling water or wine. May also be served over ice.
