Tamarind BBQ Pork Ribs

This is a recipe we developed just for Lonely Lane Farms pasture raised pork ribs.
Lonely Lane Farms is a family owned small business, that raises natural meats in Mt. Angel. The business represents seven generations of farmers who brought their German heritage and sausage recipes when they arrived in Oregon.
Tamarind BBQ Pork Ribs
Ingredients:
- 2 lbs Lonely Lane Farms pasture raised pork ribs
- 1 tsp black pepper
- 1 tsp sea salt
- 1 tsp red pepper flakes
- ½ tsp garlic granules
- ½ tsp onion powder
- ½ tsp cayenne
- ½ cup tamarind paste
- ½ cup honey
- ¼ cup hot sauce (we used Secret Aardvark)
Instructions:
- Preheat the oven to 300°F. Line a large baking sheet with aluminum foil.
- In a small bowl, mix pepper, sea salt, red pepper flakes, garlic granules, onion powder, and cayenne. Set aside.
- Peel the silver skin–or thin membrane–off the bony side of the ribs. Pat dry, and rub with spice mixture.
- Place the ribs meaty side up on the prepared baking sheet. Cover with more foil (or use a large roasting pan with a cover.) Bake for 1 hour and 30 minutes.
- Heat tamarind, honey, and hot sauce in a small pan over medium heat until bubbly, stirring occasionally.
- Heat grill to medium low. Finish ribs on the grill, brushing with tamarind sauce every 5 minutes or so, for about 20-30 minutes.
- Remove from heat and allow to rest 10 minutes before slicing and serving.
Serves 4-5
