Ingredients:
- 1 lb parsnips
- 2 Tbsp maple syrup
- 1 Tbsp olive oil
- ½ tsp cinnamon
- ¼ tsp kosher salt
- ⅛ tsp cayenne (optional)
Instructions:
- Preheat the oven to 425°F. Line a baking sheet with parchment or a silicone mat.
- Peel and cut parsnips into rounds or fries. If using very large parsnips, discard the inner core, which can be tough.
- Toss parsnips with maple syrup, oil, cinnamon, salt, and cayenne. Spread in an even layer on the prepared baking sheet.
- Roast 20 minutes or until tender, stirring halfway through.
Serves: 2-3
